For our final week of classes together, students will be completing a two day chicken stir fry lab. Last week we had a review lesson on chicken safety and the importance of all four food safety principles; clean, separate, cook, chill. Student duotangs with recipes, class work and a self-reflection will be sent home with students to share with their adults.
Thank you all for a great quarter, I wish you all a safe and restful summer! As we move into one of our final weeks of exploratory classes, we will be cooking twice. Students are making lemon butter scones after watching a demo on Friday to go over the tricky components of this recipe. On Thursday we are making fettuccine alfredo with homemade garlic bread made with roasted garlic. This is a new lab for grade 8s and I'm confident they will enjoy making it. On Friday we will be reviewing important safety skills for working with chicken in preparation of our final lab next week, chicken stir fry.
There is a course reflection being completed this week, it will be sent home at the end of the course with student duotangs full of the lessons and recipes from the 9-week course. On Tuesday there will be a cross-contamination lesson to review important food safety principles in preparation for the taco salad lab next week. The lab this week is taco salad with a focus on prep work and food safety. Friday there will be a demo on how to make lemon scones.
This week students will customize a cookie recipe after learning about the science behind cookie making. There will also be a food waste lesson to learn more about how food waste occurs along the food supply chain and steps that can be taken at home and school to reduce personal food waste.
For our second week of classes we will continue to review kitchen tasks and responsibilities in preparation of our first cooking lab on Friday. Students will be making Italian soda with homemade fruit syrup.
Students with allergies/dietary restrictions and new students to RMS must return the signed welcome letter before our first cooking lab. Failure to return this form will result in alternate ingredients not being available. See the previous post for a copy of the letter. Parents/guardians can also email me directly with requests for special ingredients. Welcome to quarter four exploratory classes at RMS! This week students will spend time getting to know the daily routines in the Food Studies class. We will begin navigating the enhanced safety and sanitation procedures that are an important part of our classroom learning this year. After going through the course outline, students will be given a welcome letter to share with their parent/guardian. Any new students to RMS or students with food allergies/dietary restrictions must return the signed form in order to participate in upcoming cooking labs.
Our final week of quarter 3 exploratory classes has arrived! This week students are making chicken stir fry over two days, prepping veggies and sauce on day one followed by a cooking day to complete the recipe. I wish you all a successful end of the school year. I appreciated the hard work students put into the lessons this quarter and hope you all apply these to your home lives. There is a course reflection students will be completing in addition to cleaning and organizing the kitchens to get them ready for quarter 4 classes. Your duotangs can be taken home once Mrs. Luthin has gone through them.
