Welcome to Quarter 3 Food Studies Exploratory!
This week we will be discussing classroom routines and spending some time getting to know each other. Next week students will be learning about safety and sanitation in preparation of the upcoming cooking labs. Attached is a copy of the course outline and the welcome letter, this letter is handed out to new students and those with allergies and/or dietary restrictions I need to be aware of. The last week of quarter two is here! For our final lab, students will be making Caesar salad with homemade croutons and bacon. Students completed a course reflection which will be sent home with their class duotangs, showcasing all of the work they have done over the past 9 weeks. For the final class there will be a kitchen cleaning and reset for the next quarter classes. Our last class in Monday, January 29.
This week it's all about the principles of food safety! Students will learn about cross-contamination and how to safely prepare chicken dishes. The lab this week is BBQ chicken quesadillas, using pre-cooked chicken to reduce the risk of foodborne illness. Students will prepare this dish as a whole kitchen with each student cooking their own quesadilla. On Friday we will go over the recipe for our final lab, Caesar salad with homemade croutons and the option of cooking bacon.
We are in the home stretch and have three more weeks of quarter two exploratory classes!
We started the week with another lab focusing on stovetop safety in addition to measuring practice and recipe reading. Students made the always popular chocolate fiddles, aka haystack cookies! These are a no-bake cookie prepared using the stovetop and dropping the cookie dough onto a cookie sheet to cool. On Friday there will be a food safety lesson where students will learn about cross-contamination and how to safely prepare chicken dishes, in preparation for the quesadilla lab next week. |
