Welcome to Quarter 4 Food Studies Exploratory! This week we will be discussing classroom routines and spending some time getting to know each other. Students will be learning about safety and sanitation in preparation of the upcoming cooking labs. Attached is a copy of the course outline and the welcome letter, this letter is handed out to all grade 6 students; students are to share this with their adult at home, get it signed and include relevant allergy information. Please have this signed form returned before the first cooking lab.
For our final week it's all about the principles of food safety! After learning more about cross-contamination and how to safely prepare chicken dishes students will be making BBQ chicken quesadillas, using pre-cooked chicken to reduce the risk of foodborne illness. Students will prepare this dish as a whole kitchen with each student cooking their own quesadilla. For the final class there will be a kitchen cleaning and reset for the next quarter classes.
This week we have another two-day lab where students will be making Caesar salad with homemade croutons and bacon. The focus for this lab is on recipe reading and knife skills. On Friday there will be a food safety lesson in preparation for the final lab next week, making BBQ chicken quesadillas. Students will complete a course reflection which will be sent home with their class duotangs, showcasing all of the work they have done over 10 weeks.
This week there will be a measuring lesson to review the basics of kitchen measuring. The lab this week is grilled cheese with a twist. Students will each make their own sandwich with the option to add ham, tomato and/or mustard. Sandwiches will be served with apple slices. The focus for this lab is on stove and knife safety.

This week we will continue to go over important classroom routines and procedures to prepare for next week's cooking lab. Reminder - any student with allergies and/or dietary restrictions must fill in the welcome letter and have a parent/guardian sign.
